Why sparkling wine makes sense here

A cool site, bright acidity, and careful vineyard work point naturally toward traditional-method sparkling wine.

The Borders are not trying to imitate a warmer wine region. The point is to work with what the site gives: a long growing season, natural acidity, and fruit that can suit traditional-method sparkling wine.

The first commercial wine is still ahead of us. Until then, the focus is on vine health, clean fruit, and the careful work that comes before any bottle is ready to pour.
